Honey Mustard Slaw: Perfect Side for your BBQ

Every time I have to go to Louisiana for work, I always try to go to Mike Anderson's Seafood for lunch or dinner.  Their Cajun classics are spot on and the prices do not drain your wallet.  I highly recommend the Jason, a Thursday lunch special.  But, I digress.  As a side, they serve this outstanding honey mustard based slaw.  Tangy and sweet at the same time, it is the perfect counter to any Cajun recipe that starts with the usual "Two Sticks of Butter."  I thought this slaw would be the perfect side for BBQ, especially pulled pork.  So, off to the Three Dogs R&D lab.

During my last experience at Mike Anderson's, I thoroughly picked my slaw apart for any secret I could discern.  Here is the basic recipe.

Mike Anderson's Honey Mustard Slaw, Recreated by Three Dogs BBQ

3 parts green cabbage, roughly diced
1 part red cabbage, roughly diced
1/4 of a small red onion, fine dice
1/4 of a green bell pepper, fine dice
1/8 tsp celery seed (the secret ingredient in my opinion)
Honey Mustard Dressing, I use Ken's Honey Mustard salad dressing

Step by Step Directions:




Dump in a bowl with the 1/8 tsp of celery seed and your dressing.  I use enough to make the slaw moist, but not runny.  For this batch, about 1/3 cup.




Mix well.

Season is Over, Time to Experiment...

Well, now that the BBQ competition season is over for 2012, it is time to make some things in the smoker that have been neglected during the summer:
  • Cold smoked bacon for the coming year
  • Steelhead and salmon
  • Nuts (my new favorite)
  • Cold smoked cheese
  • A jerky fix for the holiday
I also use this time to experiment with "Outside the Box" recipes.  Some things I am going to try are:
  • Curried Smoked Beef
  • Chicken Tikka Masala
  • Duck and/or goose
  • Cured Dried Beef a'la BBQ Guam
  • Cured and smoked fresh ham
  • Smoked Pork Chops

Caramelized Onion, Cheddar, Bacon and BBQ Sliders

We have to do a burger competition for the Boston Hills event in June.  This is not our final recipe, but it is a start.  I have a few others to try, but this is very good for a start.

1 Medium Sweet Onion, sliced.
Burgers, cut down to the bun size.
Egg Knot rolls.


Grilled the bacon, then crumbled:



Put a thin layer of olive oil in a cast iron pan, then caramelized the onions:



Added enough Sweet Baby Ray's BBQ Sauce to coat the onions:


Put the burgers on the grill.  Flipped after 4 minutes.  Topped with cheese and bacon, then covered for 4 minutes to melt the cheese:


Put the burger on the bun, topped with onion mixture, then put the lids on the top:



Even made a practice box to see if 6 will fit.  I think they will:


The sliders were nice and juicy with a nice bacon, cheddar, BBQ taste.  The caramelized onions added a nice sweet touch.

What would I do different?  I would fry the bacon the the skillet and use the fat to caramelize the onions.
