Mexican Fattie

Its been awhile since I have made a fattie.  For those who do not know what a fattie is, it is sausage, stuffed with whatever you like, wrapped in bacon and smoked till cooked.  Usually the filling is cheese and onion and the sausage is bulk breakfast sausage, but there is not a set combination.  The sky is the limit.  

This time, I wanted to experiment.  I was thinking Mexican flavors...

I used chorizo. The wife pulled the sausage out of the link. About 2 lb:

Put it in a plastic bag and spread it out flat, then into the frig to firm up a bit:

Sauted some green, red, and cubanelle peppers with a heaping tbsp of garlic, then mixed in 1 tbsp of taco seasoning:

Added 1 cup of Kraft 4 Cheese Mexican, mixed it all up, and put into a glass lined with a 1 quart ziplock:

Threw the glass in the freezer for 2 hours to firm up. 

Pulled the sausage out and cut the bag in half. Pulled out the cheese mixture, slit the bag in half, placed on the sausage and rolled it up:

Made a bacon weave. I must say the store brand bacon is nice and straight:

Rolled it up then put in the frig to firm up a bit:

About 1 hour in the smoker at 350:

Nice a juicy, full of flavor. 

I need to remember to make more fatties...
